Raisin Swiss Roll

Ingredient A:-

  • 4 Egg white
  • 50g Sugar
  • 0.5 tsp Lemon Juice (optional)

Ingredient B:-

  • 4 Egg Yolk
  • 70g Superfine Flour
  • 30ml Olive Oil
  • 30ml Fresh Milk

Raisin & Jam

Method:-

  1. Grease and Line square tray 11" x 11" with greased proof paper.
  2. Whisk ingredients B till well combined. set aside
  3. In a separate bowl, with the whisk attachment, beat the egg whites until foamy. Add in lemon juice and sugar; continue to beat until stiff peak foam.
  4. Gently fold the 1/3 egg whites into the batter and whisk; then fold in the remaining egg white till well combined.
  5. Place some raisin on the tray and pour the batter into tray.
  6. Bake in preheated oven at 180°C for 15 minutes till cooked.
  7. Remove cake from the oven invert the tray and place on a wire rack. Invert cake onto a grease-proof paper, spread cake with jam.
  8. Roll up the cake (wrap up the cake with the paper) and leave to cool before serving.
