Almond & Cranberries Nougat

Recipe
Sugar 80g
Syrup 700g
Water 80g

Butter 80g (softnened)
Milk Powder 50g (I added 80g)
Meringue Powder 40g

Cranberries 250g
Almond 250g
 
Method :-

1) Boiled sugar and syrup and water till 138C
2) Warm cranberries and almond in oven (keeping warm)
3) Whisk meringue powder with cold water till stiff peak formed
4) when the syrup mixture reached 138C, pour into meringue and mix quickly
5) Next add butter and milk powder, mix till well combined
6) Next add cranberries and almond into above mixture, mix till well combined (make sure cranberries & almond are warm)
7) Lined parchement paper on baking sheet, pour mixture on baking sheet
8) Cooled and cut
