Peanut & Cranberries Nougat

Recipe
Sugar 80g
Syrup 750g
Water 80g

Butter 80g (softnened)
Milk Powder 80g

Meringue Powder 40g 
Cold Water 40g

Cranberries 250g
Peanut 250g

Method :-

1) Boiled sugar and syrup and water till 138C
2) Warm cranberries and peanut in oven (keeping warm)
3) At the same time, Whisk meringue powder with cold water till stiff peak formed
4) when the syrup mixture reached 138C, pour into meringue and mix quickly
5) Next add butter and milk powder, mix till well combined
6) Next add cranberries and peanut into above mixture, mix till well combined (make sure cranberries & peanut are warm)
7) Lined parchement paper on baking sheet, pour mixture on baking sheet
8) Cooled and cut
