Almond Milk & Dried Longan Chiffon Cake

Recipe :

Ingredients A:
Almond Milk (unsweetened) 85g
Yolk 4
Veg Oil 40g
Cake Flour 95g

 

Ingredients B:
Whites 4
Lemon Juice
Sugar 55g

Dried Longan ~ coated with bread flour

Method:-
1) Combine all ingredients A, set aside
2) Electric handmixer beat egg white till frothy, then add lemon juice and sugar, continue to beat till stiff peak.
3) FOLD 1/3 meringue into yolk batter, then pour all into meringue and continue to FOLD till well incorporated. Next, fold in dried longan.
4) Pour into 7" chiffon tin, and bake in preheated oven 350F for 30 minutes.
5) Remove from Oven, invert tin immediately and cooled.
