I have tried and failed this cookies few years ago, diffrent recipes, different timing..NO use.
Finally 2015 CNY I solved my problem, the only way I make success is using "Convection Oven (FAN)" to bake.

Recipe

200g Fried Flour
1 egg yolk
Icing Sugar 50g (I put 30g only for myself)
Coconut Milk 75g - 85g

Method
1) Beat yolk and sugar until pale and creamy, add half coconut milk, whisk till combine.
2) Sift Fried flour into mixture, then slowly add the remaining coconut until it can form a dough, not too wet. (you should feel slightly dry but not too dry)
3) Dust a wooden mould with extra flour, lightly press dough hard into the mould. Trim excess dough and tap to remove the kuih.
4) Make a little red coloring and dot on top (I have little balance coconut milk, so I just add the color into it)
5) Bake in preheated oven at 325F FAN for 18 minutes (this is for small mould, if you have bigger mould, the timing will be longer)

Fried Flour recipe :-
~ 200g tapioca flour
~ 50 cornflour
~ 2 pandan leaves, cut into small pieces

Combine all and stir fried till flour very light and leaves turned dry about 30 minutes. I left it for 5 days.
