Pineapple Jam 
2200g+/- pineapple (after skinless) + 150g sugar + 1 cinnamon stick + 4 cloves + 2 tbsp maltose = cook about 1.5 hrs

~~ I kept 50g for caramelize, after 1 hour cooking, I caramelized the sugar then add into wok, keep stirring until well combined. 
~~ Maltose will be added when pineapple jam almost thicken.
~~ I always cook the jam on next day again to make the jam become more sticky (my style), I prefer sticky jam rather than wet jam.
