Purple Sweet Potato Buns

Recipe :-

Mashed Potato 60g...
Water 90g
Yeast 3g
Plain Flour 250g
Sugar 25g
Oil 10g

1) Combine all and to form a dough, rest 5 minutes
2) Knead again to form smooth dough, rest 5 minutes
3) Flatten dough, then roll up like swiss roll, cut, place on parchement paper.
4) Last proof 15 minutes
5) Steamed 12 minutes (medium heat)
** I steamed from cold water for 18 minutes (First 6 minutes high heat till water boiling then change to medium heat for 12 minutes)

6) Turn off heat, don't open the lid immediately, just open the lid a bit (ajar) and keep the buns in steamer for 5 minutes
