This is the first time I make"bagel", I think I made the hole too small so after baking cannot see the big hole !

What is bagel ?

A bagel is a bread, traditionally shaped by hand into the form of a ring from yeasted dough, roughly hand-sized, which is first boiled for a short time in water and then baked. The result is a dense, chewy, doughy interior with a browned and sometimes crisp exterior. Bagels are often topped with seeds baked on the outer crust, with the traditional.

Homemade Bagels

  • Bread Flour 300g
  • Black Sesame Powder 1 tbsp
  • Castor Sugar 10g
  • Warm Water 160g
  • Pinch of Salt 
  • Instant Yeast 4g 

Method :-

  1. In a small bowl, mix yeast, sugar and warm water together and let stand 3 minutes.
  2. Mix flour, black sesame powder and salt in a large bowl; then add the yeast mixture. Stir until combined. 
  3. If kneading by hand, turn dough out onto a lightly floured surface and knead until very smooth and elastic, about 10 minutes.
  4. If using a stand mixer, knead dough with the dough hook until elastic, about 8 minutes on a low speed. Place dough in a lightly greased bowl, cover with plastic wrap and let rise for 1 hour, or until doubled in size.
  5. Punch dough down. Divide and shape into 7 balls. Allow to rest for 15 minutes.
  6. Bring 1.5 litre of water with 50g sugar to boil.
  7. Make a hole in each ball of dough and pull open about 2 inches, making a bagel shape. Place the shaped dough onto a cookie sheet and cover for 10 minutes.
  8. Drop the bagels carefully into the boiling water. Boil for 1 minutes each side, turning once. Using strainer, transfer bagels to a clean towel to drain for a moment, then place on a parchment-lined baking sheet. Repeat process with remaining bagels.
  9. Bake in preheated oven at 190C for 20-22 minutes, until golden brown.
  10. Cool completely on a wire rack.
