Recipe

Cake flour / low protein flour 200g
Golden syrup 120g
Peanut oil 50g
Alkaline water 1 tsp

egg wash ~ yolk only

~ Combine all wet ingredients and mixed, add flour to form a dough.
~ Rest dough for 2 hours
~ For this fish mould : skin 20g + filling 15g
~ Remember sprinkle some flour on mould before pressing dough on it. lightly tap the mould left/right to remove fish from mould.
~ Bake in preheated oven 330F for 10 minutes, then bring out and brushed with egg wash and continue to bake about 10 minutes.
