Madeleine

2 large eggs
50g sugar
10g honey
Pinch of salt
125g flour + 0.5 tsp baking powder
125g unsalted butter, melted, cooled slightly
Fresh milk 30g

Method :-
1) Preheat oven to 375°F / 190C
2) Beat eggs, sugar and honey till thicken and pale. 
3) Gently fold in flour in 3 additions, then fold in melted butter and milk till fully incorporated. 
4) Keep batter in fridge about 30 - 60 minutes
5) Place batter into piping bag, then pipe on shell baking sheet.
6) Bake in preheated oven for 8 minutes.

~ 注意 : 没放蜜糖会比较浅色,放了会比较深色, 随个人喜欢 (Honey will make madeleine darker, if you prefer lighter colour then omit honey)
