煎饺 (pan-fried dumpling)

Bread Flour 面包粉 150g
Low protein flour 低筋面粉 50g
Hot water 热水 120cc...
Pinch of salt 盐
~ combine flour and salt then add hot water to form a dough. Rest dough for 30 minutes.
~ Divide dough to 10g each

馅料 Filling
~ Pork 猪肉碎 200g
~ Cabbage 高丽菜 100g
~ Ginger sauce 姜汁 / Pinch of Salt 盐 / Soy Sauce 酱油 / Sesame Oil 麻油 / Pepper 胡椒粉
* Combine all ingredients

1) Wrap dumpling as your own preferred method
2) Heat little of oil over medium heat. Place 6-8 dumplings in the pan and until bottom turns light brown. Pour water into pan (water level is half of dumpling) and cover with a lid for 4-5 minutes, until the water has completely evaporated. Remove lid and loosen the dumplings with a spatula. The bottoms will be golden brown and crisp.
