Very delicious and soft....try it ! 
Banana Raisin Muffins
Ingredients
- Superfine flour 200g
- Baking powder 1 tsp
- Baking soda 0.5 tsp
- Cinnamon powder 0.5 tsp
- Corn / Soya oil 150g
- Fresh Milk 70g
- Egg 2 nos
- Brown sugar 60g (reduced)
- Mashed Banana 200g + 2 tsp lemon juice
- Raisin 100g or more
Method:-
- Sift flour, baking powder, soda and cinnamon powder into a mixing bowl.
- In another bowl, beat egg, oil and milk together. Mix in the mashed banana and stir well.
- Gently fold in the flour mixture into the egg mixture. (Avoid over stirring when making muffins, do not stir or beat batter until it is smooth and lump free. Muffin batter should be lumpy, your goal is just to moisten the ingredients. You’ll find your muffins will have large holes and a tough texture with overbeating)
- Gently fold in raisin into mixture.
- Use an ice cream scoop to spoon the mixture into the muffin tins or paper cups. It keeps your hands from getting messy and ensures uniform-size muffins. (I alwasy use ice cream scoop)
- Bake in a preheated 190°C for approximately 18 - 20 minutes or until muffins turn golden brown or a toothpick inserted in the center of a muffin comes out clean.
- Remove from oven and serve warm.
