Both of my sons and I love to eat scones. I love to spread with jam but my sons have it plain.
Raisin Scones
Superfine Flour 200g + 2 tsp baking powder
Castor Sugar 2 tbsp
Pinch of salt
Chilled unsalted butter 65g (cut into cubes)
Fresh Milk 90g-100g
Raisins 100g
Method:-
Preheat oven to 190 degrees C.
In a large bowl, combine flour, sugar, baking powder, and salt. With a pastry blender or cutter, cut butter into flour mixture until crumbly.
Stir in raisins, then add in milk and combine till dough formed.
On a lightly floured surface, knead dough gently. (Do not over knead)
Roll out the dough into a circle 1.5cm thick. Using a lightly greased and floured 1.5-inch round cutter, cut into rounds, cutting close together to generate as few scraps as possible. Dip cutter into flour as often as necessary to keep dough from sticking. (Scones can be cut into any shape you desire)
In a small bowl, combine 1 egg and 1 tablespoon milk; brush onto scones. Bake 15 to 18 minutes or until golden brown. Remove from oven and serve warm.
