Raisin Scones 

Ingredients:-

  • Superfine flour or plain flour 200g
  • Baking Powder 2tsp
  • Castor Sugar 2 tbsp
  • Pinch of Salt
  • Butter 65g
  • Fresh Milk 100g 
  • Raisin 100g

* mix 1 egg with milk for brushing.

Method:- 

  1. Preheat to 190°C.

  2. Lightly flour baking sheet.

  3. Combine dry ingredients in large bowl. Cut in butter until mixture resembles coarse meal. Stir in raisins.

  4. Mix in enough milk to form soft, but not sticky dough.

  5. Turn dough out onto lightly floured surface and knead gently until dough holds together.

  6. Roll out to thickness of 1.5cm.

  7. Cut out rounds using 4cm cutter (push straight down, don't twist).

  8. Arrange rounds on prepared sheet and lightly brush with milk + egg.

  9. Bake scones until puffed and golden, about 15 -17 minutes.
